Each week I'll post a favorite recipe for those who enjoy mixing it up in the kitchen.

 

We all know it’s not always easy to get young children to eat vegetables. Here’s one that worked for my children. It’s simple and takes very little prep time.

 

Zucchini Pizzas

 

Small, whole zucchini

Mozzarella cheese

Spaghetti sauce

 

Slice zucchini in half lengthwise and cut off ends. Place in microwave dish and cook on high for 1 ½ to 2 minutes depending upon doneness you prefer. Slice mozzarella cheese thinly. Spoon spaghetti sauce on top of cooked zucchini then top with mozzarella cheese. Place on tin foil on cookie sheet and broil for 30 seconds to 1 minute until cheese is melted and slightly brown.
